Cheap and Easy Potato Soup

What you'll need: A crock pot or a soup pot. Potatoes, a can of evaporated milk (dairy or non) some frozen corn (or other desired veggies) and some fake bacon bits (for finishing optional) spices (salt, pepper, garlic, paprika, onion etc) and some milk of choice (a cup or 2 )


Grab a few potatoes (like one per person) clean them and chop them into bite sized chunks then add them to the crock pot. next is the bag of corn/veggies. For 4 or less people I'll use 1 bag of corn, and maybe extra veggies if i have some. Anything more that 4 people (or making extra to can) and I'll use 2 or more bags. This is where you get creative with adding veggies, zucchini/squash goes good here, or more like onions, and peppers could make good additions. After you get all the veggies loaded into the crock pot add in the evaporated milk. For 1 whole big 5qt crock pot I use only 1 can of evaporated milk (to thicken the broth). Then add the milk of your choice to top off the rest until you're satisfied with the liquid to solid ratio. *if you want it more liquid to solid but also thicker and creamier increase the evaporated milk. After the solids and liquids are added i add the spices. I usually use garlic, onion, salt, pepper and paprika as default and go from there based on the veggies. stir in everything together cover and leave on high for about 4 hours or until the potatoes are cooked through (bigger chonks take longer to cook). to serve I'll add fake bacon (we choose not to eat meat) crumbles on top of the soup for a little extra flavor and texture.


I like to use this recipe to use up any leftover bits, or on busy days when I know everyone will want a comforting hot bowl of nourishment. It's not too pricey and I've skipped the evaporated milk many times (because it can be expensive) and the soup comes out GREAT!
